Why are my pork chops always dry?

The best test of doneness is to use an instant-read thermometer to check the internal temperature of your pork. Properly cooked pork is cooked to 145°, removed from the heat and allowed to rest for three minutes before slicing. Cooking to 145° will result in tender, juicy pork that will have a blush of pink in the center.
