Why are my pork chops always dry?

Cooking delicious, flavorful pork is all about temperature. The dryness comes from probably leaving them on the grill or in the oven too long. Today’s pork is very lean and shouldn’t be overcooked. One of the most common misconceptions about pork is that it needs to be cooked well-done. Cook pork chops like a steak! The best test of doneness is to use an instant-read thermometer to check the internal temperature of your pork. Properly cooked pork is cooked to 145°, removed from the heat and allowed to rest for three minutes before slicing. Cooking to 145° will result in tender, juicy pork that will have a blush of pink in the center.
